As promised, here is a non-chicken recipe for you. I've made these mini meat loaves a handful of times and have always liked them. Adam isn't a fan of meatloaf, but he will grudgingly eat these. Probably because they have cheese in them. Unfortunately, I will have to omit the cheese next time I eat them, since I have eliminated dairy from my diet.

Mini Meat Loaves
1 egg
3/4 cup milk
1 cup shredded cheddar cheese
1/2 cup oats
1/2 cup finely chopped onion
1 tsp salt
1 lb ground turkey or beef
1/3 cup ketchup
1/4 cup brown sugar
1 tsp mustard
In a bowl beat together the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Share into 8 loaves and place in a 13-in x 9-in baking dish. In a small bowl combine ketchup, brown sugar and mustard. Spoon over loaves. Bake uncovered at 350 degrees for 45 minutes, or until a meat thermometer reads 160 degrees.
You can use ground turkey in a variety of recipes that normally call for ground beef. When you buy ground turkey be sure that it says "ground turkey breast" if you are looking for a lower calorie option. Otherwise they include all sorts of turkey parts that are not necessarily lean.
