Hobo Dinners

I often defrost ground beef in the morning without the slightest idea of what I will do with it come dinnertime. Especially now that we know Lucas has low iron levels, I've been trying to cook ground beef 1-2 times per week because I know he will eat it. Yesterday after defrosting my meat I started browsing a food website (Mix and Match Mama) and came across this recipe for Hobo Dinners.
I decided to try it and I'm glad I did! Not only was it incredibly simple to make, but the end result tasted like pot roast. Here is my version. I had purple potatoes on hand, hence all the color.
Adam texted me from work saying "I'm starving!!". This was the perfect meal to greet him with after 12 hours of hard work. If you want to moisten it up a little bit you could add gravy, Worcestershire, or a little broth to the foil packet before cooking. Of course I doused mine with worcestershire sauce before eating, but Adam ate his as is and thought it was great. Here's the recipe.

Hobo Dinners

1 1/2 pounds ground beef (I would recommend at least 90/10 fat content so it doesn't dry out)
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
5 red skin or new potatoes, chopped
1 onion, thinly sliced
a big handful of baby carrots
Lots of Salt and Pepper
 
 
Preheat your oven to 375 degrees.
Combine your ground beef, Worcestershire sauce and garlic powder in a mixing bowl.  Divide mixture into four separate patties and shape each one into a flat burger.
Place each patty on a piece of aluminum foil that is about 18 inches long.  Divide your potato pieces, onion slices and carrots between the four patties (just lay them right on top of your patty).  Sprinkle a generous amount of salt and pepper down over all four foil packets.
Wrap the foil packets tightly. Place the packets on a baking sheet and bake one hour.
Remove from oven and place one packet on each dinner plate.  Open up your packet and enjoy!

  1. My mom always made this meal when we were camping. She'd bring a rack from the grill, lay it a few inches above the fire on the grate, and put the packets on the rack. I've never tried it at home in the oven, but I will have to. It is an easy, good meal. Perfect for families with little time to cook.
